China White tea introduction:
China white tea is a slightly fermented tea with its body covered
with fluffy white hair. The general processing for China white tea
only includes two steps: withering and drying. Thereinto, the withering
process is the key working on the quality of white tea. During the
longtime withering process, a series of chemical changes happen in
the fresh leaves,which resulting in the especial character of white
tea:"silvery hairs covered body, fresh aroma, mellow taste and
brilliant yellow soap".
China white tea is processed without rolling to keep the original
form of leaves. According to the freshness of leaves, China white
tea can ulteriorly categorized into two varietes: white bud tea
and white leaf tea. Usually, the buds of "great white tea plant"
are plucked to make white bud tea٬such as silver
needle pekoe; The bud and first two leaves(or only leaves) are
plucked to make white leaf tea, such as white
peony, longevity eyebrow etc.
